Chickpea Farinata w/Grilled Veggies
Low Fat and Low Histamine
1/2 cup chickpea flour
1/2 cup water
1 tbs oil (olive/sunflower/rapeseed)
salt, pinch
pepper, pinch
coriander, as much (or as little) as you like
Prep:
Mix the ingredients above. Use a whisk to make smooth. Let it sit for 15-30 mins while you lightly sautee some onions (1 small), a little garlic, and veggies of your choice (preferably courgettes, asparagus, red/yellow peppers).
Cook the chickpea mix like a pancake. Add the veggies, fold, and flip over.
